INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1/2 cup maple syrup or agave syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (such as blueberries, raspberries, strawberries)
  • 1/2 cup chopped nuts (such as walnuts or pecans), optional

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, mix together the pumpkin puree, maple syrup or agave syrup, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the mixed berries and chopped nuts, if using.
  6. Pour the batter into the prepared cake pan and spread it out evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
