INGREDIENTS

  • 2 ears of corn, husked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional: Avocado slices for serving

INSTRUCTIONS

  1. Preheat grill to medium-high heat.
  2. Grill the corn on the preheated grill, turning occasionally, until kernels are tender and slightly charred, about 8-10 minutes. Remove from grill and let cool slightly.
  3. Once cooled, cut the kernels off the cob into a large bowl.
  4. Add the black beans, diced bell pepper, chopped red onion, and chopped cilantro to the bowl with the grilled corn.
  5. In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper.
  6. Pour the dressing over the salad and toss until everything is well coated.
  7. Taste and adjust seasoning if needed.
  8. Serve the Grilled Corn & Black Bean Salad at room temperature or chilled, garnished with avocado slices if desired.
