  • 2 tablespoons coconut oil
  • 1 onion, chopped
  • 3 cloves garlic, minced

  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cauliflower florets
  • 1 cup green beans, trimmed and chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread (for serving)


  1. Heat coconut oil in a large pot or Dutch oven over medium heat. Add chopped onions and sauté until they become translucent, about 5 minutes.
  2. Add minced garlic and grated ginger to the pot, and cook for another 1-2 minutes until fragrant.
  3. Stir in diced carrots, bell pepper, zucchini, cauliflower florets, and green beans. Cook for 5-7 minutes until the vegetables begin to soften.
