  1. Peel the pumpkin.Discard the seeds and veins.Cut into bite-size pieces.
  2. Add onion, olive oil, garlic powder, and salt.
  3. Mix well and roast in the air fryer for 15 minutes.

INSTRUCTIONS

  1. Add all the ingredients for salad dressing in a jar. 
  2. Seal it with the lid. 
  3. Shake until combined. The vinaigrette is ready!

ASSEMBLE SALAD

  1. On a tray, arrange the lettuce, kale, and rocket leaves. 
  2. Add feta cheese, roasted almonds, pomegranate seeds, onion and  the roasted pumpkin. 
  3. Add a little salad dressing and parsley. 
  4. Before eating, gently mix the ingredients in the pumpkin salad.
