This classic Tuscan style pasta is simple yet bursting with flavors from the sun-dried tomatoes, garlic, and basil. It’s a comforting and satisfying dish that’s perfect for any day of the week. Serve it with a side of crusty bread and a green salad for a complete meal!

  • 8 oz (225g) pasta (such as spaghetti or fettuccine)
  • 2 tablespoons extra-virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1 can (14 oz) diced tomatoes, drained
  • 1/2 cup vegetable broth
  • 1/2 cup sliced sun-dried tomatoes (drained if in oil)
  • 1/4 cup chopped fresh basil leaves
  • Salt and black pepper to taste
  • Vegan Parmesan cheese (optional, for serving)
  • Fresh basil leaves, for garnish


  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta cooking water.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes. Cook for about 1 minute, or until the garlic is fragrant but not browned.
  3. Add the diced tomatoes to the skillet. Cook for 3-4 minutes, allowing the tomatoes to soften and break down slightly.
  4. Pour in the vegetable broth and bring to a simmer. Let it cook for another 3-4 minutes.
  5. Add the sliced sun-dried tomatoes to the skillet. Stir to combine with the sauce.
  6. Season with salt and black pepper to taste. If the sauce is too thick, add a bit of the reserved pasta cooking water to reach your desired consistency.
  7. Add the cooked pasta to the skillet. Toss well to coat the pasta evenly with the sauce.
  8. Stir in the chopped fresh basil leaves.
  9. Cook for another 2-3 minutes, allowing the flavors to meld together and the pasta to absorb some of the sauce.
  10. Remove from heat and let it rest for a minute.
  11. Serve the classic Tuscan style pasta hot, garnished with fresh basil leaves and a sprinkle of vegan Parmesan cheese, if desired.
  12. Enjoy this comforting and flavorful pasta dish that captures the essence of Tuscan cuisine!
