INGREDIENTS

  • 2 medium zucchinis, grated
  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the grated zucchini, cooked quinoa, black beans, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper. Mix well until everything is evenly combined.
  3. Use your hands to shape the mixture into burger patties. If the mixture is too wet, you can add more breadcrumbs to help bind it together.
  4. Heat the olive oil in a skillet over medium heat. Once hot, add the burger patties and cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Transfer the cooked patties to the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until heated through.
