  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley (for garnish)

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
  2. In a mixing bowl, combine the thinly sliced potatoes, sliced onion, and minced garlic.
  3. In a separate bowl, whisk together the coconut milk, nutritional yeast, olive oil, dried thyme, dried rosemary, salt, and pepper.
  4. Pour the coconut milk mixture over the potatoes and toss until the potatoes are evenly coated.
  5. Transfer the potato mixture to the prepared baking dish, spreading it out into an even layer.
