INGREDIENTS
- 8 oz (225g) soba noodles
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 2 medium carrots, julienned
- 1/2 cup edamame beans, thawed if frozen
- 2 green onions, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- Sesame seeds, for garnish
- For the Dressing:
- 1/4 cup soy sauce or tamari
- 2 tablespoons rice vinegar

- 1 tablespoon maple syrup or agave nectar
- 1 teaspoon grated ginger

INSTRUCTIONS
- Cook the soba noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large mixing bowl, combine the sliced red bell pepper, julienned cucumber, julienned carrots, edamame beans, green onions, chopped cilantro, and chopped mint.
