INGREDIENTS

  • 2 medium zucchinis, sliced into rounds
  • 2 bell peppers (any color), sliced into strips

  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (such as oregano, thyme, basil)
  • Salt and pepper to taste
  • Optional: grated vegan cheese for topping

INSTRUCTIONS

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a large mixing bowl, toss the sliced zucchinis and bell peppers with olive oil, minced garlic, dried Italian herbs, salt, and pepper until evenly coated.
