INGREDIENTS

For the Cauliflower Steak:
  • 1 large head cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Chimichurri Drizzle:

  • 1/2 cup fresh parsley, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste

INSTRUCTIONS

For the Cauliflower Steak:
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Remove the leaves from the cauliflower and trim the stem end to create a flat base. Carefully slice the cauliflower into 1-inch thick steaks. You should get 2-4 steaks, depending on the size of the cauliflower.
  3. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Brush both sides of the cauliflower steaks with the olive oil mixture and place them on the prepared baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the cauliflower is tender and golden brown with crispy edges.
For the Chimichurri Drizzle:
  1. While the cauliflower is roasting, prepare the chimichurri drizzle. In a bowl, combine the finely chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Stir well to combine.
  2. Taste and adjust the seasoning as needed. If you prefer a thinner consistency, you can add a bit more olive oil or a splash of water.
Assembly:
  1. Once the cauliflower steaks are done, transfer them to serving plates.
  2. Drizzle the chimichurri sauce generously over the cauliflower steaks.
  3. Serve the smoky cauliflower steaks with chimichurri drizzle immediately, and enjoy the flavorful and satisfying dish!
