Savor the spice with our Cauliflower Masala over Rice! A fragrant and flavorful dish that’s perfect for a satisfying meal. 🍛✨

INGREDIENTS

Rice
1/2 cup cashews
1/2 cup water
3/4 cup almond milk
1 3/4 cup tomato purée
1 cup chopped onions
Minced garlic
Sprinkle of ginger, salt, and pepper
1/2 tsp turmeric powder
1/2 tsp coriander powder
1 tsp coconut sugar
1 1/2 tbsp gram masala powder

METHOD

  1. Preheat your oven to 425°F (220°C).
  2. Prepare rice according to your preference.
  3. Season cauliflower with desired spices and herbs.
  4. Place cauliflower on a baking sheet and bake in the preheated oven for approximately 30 minutes or until tender and lightly browned.
  5. For the masala sauce, you’ll need the following ingredients:
    • 1/2 cup cashews
    • 1/2 cup water
    • 3/4 cup almond milk
    • 1 3/4 cup tomato purée
    • 1 cup chopped onions
    • Minced garlic
    • Sprinkle of ginger, salt, and pepper
    • 1/2 tsp turmeric powder
    • 1/2 tsp coriander powder
    • 1 tsp coconut sugar
    • 1 1/2 tbsp garam masala powder
  6. In a saucepan, combine cashews, water, almond milk, tomato purée, onions, garlic, ginger, salt, pepper, turmeric, coriander, coconut sugar, and garam masala powder.
  7. Cook the mixture over medium heat until it thickens and flavors meld together, stirring occasionally. Let it simmer for about 15-20 minutes.
  8. Once the sauce is cooked down and flavors are well combined, transfer it to a blender and blend until smooth.
  9. Serve the masala sauce over the prepared rice and baked cauliflower. Enjoy your meal!
