INGREDIENTS
- 1 cup quinoa, rinsed
- 2 cups water
- 1 ripe avocado, sliced
- 2 blood oranges, peeled and segmented
- 1 cup broccoli florets, blanched
- 1/2 watermelon radish, thinly sliced
- 2 cups fresh spinach leaves
- 1/4 cup pumpkin seeds (pepitas), toasted
- Fresh cilantro or parsley, for garnish
- Salt and pepper to taste
DRESSING
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or maple syrup
- Juice of 1 lime
- Zest of 1 lime
- Salt and pepper to taste
INSTRUCTIONS
- Cook Quinoa: In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is cooked and water is absorbed. Fluff with a fork and let it cool slightly.
