  • 8 oz (225g) pasta of your choice
  • 2 cups sliced mushrooms (button, cremini, or any variety you prefer)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup vegan cream (such as cashew cream or coconut cream)
  • 2 tablespoons nutritional yeast (optional, for extra flavor)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)


  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
  3. Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5-6 minutes.
  4. Pour in the vegan cream and nutritional yeast (if using), stirring to combine. Let the mixture simmer gently for a few minutes until the sauce thickens slightly. Season with salt and pepper to taste.
  5. Add the cooked pasta to the skillet with the mushroom cream sauce, tossing until the pasta is evenly coated.
