INGREDIENTS

  • 1 1/2 cups buckwheat flour
  • 1/2 cup almond flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (such as blueberries, raspberries, or strawberries), fresh or frozen
  • 1/2 cup vegan chocolate chips

INSTRUCTIONS

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with coconut oil.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together buckwheat flour, almond flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Combine Wet Ingredients:
    • In a separate bowl, mix together maple syrup, melted coconut oil, almond milk, and vanilla extract.
  4. Combine Wet and Dry:
    • Pour the wet ingredients into the dry ingredients. Stir until just combined, being careful not to overmix. The batter will be thick.
  5. Fold in Berries and Chocolate:
    • Gently fold in the mixed berries and vegan chocolate chips into the batter.
  6. Fill Muffin Tin:
    • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake:
    • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Enjoy:
    • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
