INGREDIENTS

For the Vegan Bolognese:
  • 1 cup barley, rinsed
  • 1/2 cup red lentils, rinsed
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, finely diced
  • 2 celery stalks, finely diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup tomato sauce
  • 1 teaspoon dried basil
  • Salt and pepper to taste
For Serving:
  • Cooked spaghetti
  • Shaved coconut cream (using a vegetable peeler)

INSTRUCTIONS

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.
  2. Add the diced carrots and celery to the pot, and cook for another 5 minutes
