INGREDIENTS

  • 5 fresh sage leaves, ripped in half
  • 4 tablespoons lemon juice (normally 1 lemon)
  • 2 fresh thyme sprigs (around 5–7 cm long)
  • 3cm / 1.18 inch knob of ginger, sliced
  • 2 teaspoons maple syrup 

DIRECTIONS

  1. All components (except from the sweetener) should be added to a saucepan along with 2 cups/500 ml of boiling water and simmer.
  2. Pour through a strainer into cups, then whisk in the sweetener.
  3. You can flavor the beverage with a slice of lemon and a sprig of thyme, if you’d like.
  4. Drink it warm or let it chill completely overnight for a nice, refreshing beverage.
