INGREDIENTS

  • 1 medium cauliflower, cut into florets
  • 2 medium potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro leaves for garnish

DIRECTIONS

  1. Heat oil in a pan or skillet over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn translucent.
  3. Add minced garlic, grated ginger, and chopped green chili. Sauté for another minute.
  4. Add chopped tomatoes and cook until they turn mushy and oil starts to separate.
  5. Stir in turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 1-2 minutes.
  6. Add diced potatoes and cauliflower florets to the pan. Mix until they are coated with the spice mixture.
  7. Cover the pan and let the vegetables cook on low-medium heat for about 15-20 minutes or until they are tender, stirring occasionally.
  8. Once the vegetables are cooked through, sprinkle garam masala on top and give it a final stir.
  9. Garnish with fresh cilantro leaves and serve hot with roti, naan, or rice.
