INGREDIENTS

  • 2 large sweet potatoes, peeled and thinly sliced
  • 1 cup coconut milk (or any plant-based milk)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons nutritional yeast
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

INSTRUCTIONS

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil and set aside.
  2. In a mixing bowl, combine coconut milk, minced garlic, olive oil, nutritional yeast, dried thyme, salt, and black pepper. Whisk until well combined.
  3. Arrange a layer of thinly sliced sweet potatoes in the greased baking dish, slightly overlapping each other.
  4. Pour a portion of the coconut milk mixture over the layer of sweet potatoes, ensuring they are evenly coated.
  5. Repeat the process with another layer of sweet potatoes and coconut milk mixture until all the sweet potatoes and coconut milk mixture are used.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  7. After 45 minutes, remove the aluminum foil from the baking dish and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden brown.
  8. Once cooked, remove the Roasted Sweet Potato Gratin from the oven and let it cool slightly.
  9. Sprinkle chopped fresh parsley over the top of the gratin before serving.
  10. Serve hot as a delicious side dish or as a main course with a fresh salad.
