  • 1 cup quinoa, rinsed
  • 1 cup bulgur wheat
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup toasted sunflower seeds
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste


  1. In a medium saucepan, combine the quinoa, bulgur wheat, and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the grains are cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
  2. In a large mixing bowl, combine the cooked quinoa and bulgur wheat with the cherry tomatoes, cucumber, bell pepper, red onion, parsley, mint, and toasted sunflower seeds.
  3. In a small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper to make the dressing.
  4. Pour the dressing over the grain and vegetable mixture and toss until everything is well coated.
  5. Taste and adjust seasoning if needed.
  6. Serve the grain salad immediately, or chill in the refrigerator for a couple of hours to allow the flavors to meld together before serving.
