INGREDIENTS
SALAD
- 5 Roma tomatoes chopped, about Âľ lb
- 1 long English cucumber chopped
- 1 green pepper chopped
- ½ small red onion thinly sliced or diced
- ÂĽ cup pitted Kalamata olives (or black olives)
- 4 ounces vegan cheese cut or crumbled
- parsley for garnish chopped, optional
DRESSING
- â…“ cup olive oil
- 2 tablespoons red wine vinegar
- ½ lemon juiced, about 1 tablespoon
- 1 teaspoon dried oregano leaves
- ½ teaspoon dried basil leaves
- ½ teaspoon Kosher salt and black pepper to taste
- 1 pinch sugar optional
DIRECTIONS
- In a small bowl, thoroughly combine or shake all the dressing ingredients together.
- Combine tomatoes, cucumber, green pepper, red onion, and olives in a large bowl.
- Mix the salad thoroughly after adding the dressing.
- Add vegan cheese and, if preferred, parsley as garnishes.
