INGREDIENTS

- 1 red chili pepper, finely chopped (seeds removed for less heat)
- 1 tablespoon sesame seeds
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)

INSTRUCTIONS
- Prepare the Eggplant:
- Slice the eggplant into rounds or lengthwise strips, about 1/2 inch thick.
- Place the slices in a colander and sprinkle with salt. Let them sit for 15 minutes to draw out excess moisture.
- Make the Marinade:
- In a small bowl, whisk together sesame oil, soy sauce or tamari, rice vinegar, maple syrup or agave nectar, minced garlic, and chopped red chili pepper.
- Marinate the Eggplant:
- Pat the eggplant slices dry with paper towels to remove the salt and moisture.
- Place the eggplant slices in a shallow dish or resealable plastic bag.
- Pour the marinade over the eggplant, making sure each slice is coated evenly. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat the Grill:
- Preheat an outdoor grill or grill pan over medium-high heat.
- Grill the Eggplant:
- Remove the eggplant slices from the marinade, reserving the marinade for basting.
