INGREDIENTS
For the Salad
- 4 ounces arugula greens
- ÂĽ cup blueberries
- 1 pear sliced into ÂĽ half moons
- ½ cup toasted walnuts
- 1 ounce of Tofu Gouda cheese
For the Dressing
- 2 tablespoons freshly squeezed lemon juice about 1/2 medium lemon
- 1 tablespoon balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon kosher salt
DIRECTIONS
