Healthy, Light, and Fresh Arugula Salad

For the Salad

  • 4 ounces arugula greens
  • ¼ cup blueberries
  • 1 pear sliced into ¼ half moons
  • ½ cup toasted walnuts 
  • 1 ounce of Tofu Gouda cheese

For the Dressing

  • 2 tablespoons freshly squeezed lemon juice about 1/2 medium lemon
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt


  1. Add all ingredients to a bowl 
  2. Mix with the dressing. 
  3. Make sure to toss everything to combine and top with arugula.
