INGREDIENTS

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 stalks celery, diced
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Hot sauce, for serving (optional)

INSTRUCTIONS

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  3. In a large skillet or pot, heat the olive oil over medium heat.
  4. Add the diced onion, minced garlic, diced bell pepper, and diced celery to the skillet. Cook, stirring occasionally, for 5-7 minutes, or until the vegetables are softened.
  5. Add the drained and rinsed kidney beans to the skillet. Stir in the diced tomatoes (undrained), smoked paprika, dried thyme, cayenne pepper, salt, and pepper.
  6. Bring the mixture to a simmer. Reduce heat to low, cover, and let it simmer for 10-15 minutes to allow the flavors to meld together.
  7. Taste and adjust seasoning as needed.
  8. Serve the cozy red beans and rice by spooning the bean mixture over the cooked rice.
  9. Garnish with chopped green onions and serve with hot sauce on the side, if desired.
