INGREDIENTS

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups broccoli florets
  • 2 cups vegetable broth
  • 1 cup almond milk (or any plant-based milk)
  • 1/2 cup nutritional yeast
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded vegan cheddar cheese
  • Optional toppings: chopped chives, extra shredded vegan cheddar cheese

INSTRUCTIONS

  1. Sauté Vegetables:
    • In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sautĂ©ing until softened, about 3-4 minutes.
  2. Add Broccoli and Broth:
    • Add the broccoli florets to the pot and stir to combine with the onion and garlic.
    • Pour in the vegetable broth, cover, and let the mixture simmer for about 10-15 minutes, or until the broccoli is tender.
  3. Blend the Soup:
    • Using an immersion blender or transferring in batches to a blender, blend the soup until smooth.
    • Return the soup to the pot if using a blender.
  4. Add Almond Milk and Seasoning:
    • Stir in the almond milk, nutritional yeast, paprika, salt, and pepper. Let the soup simmer for an additional 5 minutes.
  5. Stir in Vegan Cheddar:
    • Stir in the shredded vegan cheddar cheese until melted and well combined.
  6. Serve:
    • Ladle the soup into bowls and garnish with chopped chives and extra shredded vegan cheddar cheese if desired.
    • Serve hot and enjoy!
Notes:
  • For a thicker soup, you can use less vegetable broth or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) to the soup.
