This flavorful mango habanero glazed tofu is a perfect balance of sweet, spicy, and tangy flavors. The tofu is crispy on the outside and tender on the inside, coated with a sticky and aromatic glaze made from ripe mangoes and fiery habanero peppers.

INGREDIENTS

  • 1 block (14 oz) firm tofu, pressed and drained
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Mango Habanero Glaze:

  • 1 ripe mango, peeled and diced
  • 1 habanero pepper, seeded and minced
  • 2 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh lime juice
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (cornstarch slurry)
  • Chopped cilantro (for garnish)
  • Sesame seeds (for garnish)

INSTRUCTIONS

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the pressed tofu into cubes or rectangles, about 1/2 inch thick.
  3. In a shallow bowl, toss the tofu cubes with cornstarch until lightly coated.
  4. Heat olive oil in a large skillet over medium-high heat. Add the tofu cubes to the skillet and cook for 3-4 minutes per side, or until golden brown and crispy. Remove from heat and set aside.
  5. In a blender or food processor, combine the diced mango, minced habanero pepper, maple syrup, soy sauce, rice vinegar, lime juice, minced garlic, and grated ginger. Blend until smooth.
  6. Transfer the mango habanero mixture to a small saucepan. Bring to a simmer over medium heat.
  7. Stir in the cornstarch slurry and continue to simmer for 2-3 minutes, stirring constantly, until the sauce thickens.
  8. Taste the glaze and adjust sweetness or spiciness as desired.
  9. Remove from heat and let the glaze cool slightly.
  10. Dip each tofu piece into the mango habanero glaze, coating evenly.
  11. Place the glazed tofu pieces on the prepared baking sheet.
  12. Bake in the preheated oven for 10-12 minutes, or until the glaze is sticky and caramelized.
  13. Remove from the oven and let the tofu cool for a few minutes.
  14. Garnish with chopped cilantro and sesame seeds.
  15. Serve the flavorful mango habanero glazed tofu hot as a main dish or appetizer.
