INGREDIENTS

  • ¼ sweet potato
  • ¼ can chickpeas
  • 2 garlic cloves
  • 20 sprays sunflower oil
  • ½ tsp cumin
  • 30g couscous
  • 5ml rapeseed oil
  • 15g tahini
  • ½ lemon, juiced
  • 1 pinch salt
  • 1 pinch black pepper
  • ½ avocado
  • 25g salad leaves
  • 6 cherry tomatoes
  • 5 basil leaves

 DIRECTIONS

  1. Preheat the oven to 180C
  2. On a baking sheet, combine the chickpeas, garlic, and 1 cm thick slices of sweet potato. Cumin should be sprinkled on top before roasting potatoes for 15 minutes or until they are cooked.
  3. As directed on the packet, make the couscous.
  4. Mix the rapeseed oil, tahini, and lemon juice to make the dressing. To taste, add salt and pepper. Roasted garlic is mashed and added to the dressing.
  5. Serve the couscous with avocado, roasted vegetables, mixed leaves, cherry tomatoes, basil leaves, and roasted chickpeas after fluffing it with a fork. Dress with a drizzle.
