INGREDIENTS
- ¼ sweet potato
- ¼ can chickpeas
- 2 garlic cloves
- 20 sprays sunflower oil
- ½ tsp cumin
- 30g couscous
- 5ml rapeseed oil
- 15g tahini
- ½ lemon, juiced
- 1 pinch salt
- 1 pinch black pepper
- ½ avocado
- 25g salad leaves
- 6 cherry tomatoes
- 5 basil leaves
DIRECTIONS
- Preheat the oven to 180C
- On a baking sheet, combine the chickpeas, garlic, and 1 cm thick slices of sweet potato. Cumin should be sprinkled on top before roasting potatoes for 15 minutes or until they are cooked.
- As directed on the packet, make the couscous.
- Mix the rapeseed oil, tahini, and lemon juice to make the dressing. To taste, add salt and pepper. Roasted garlic is mashed and added to the dressing.
- Serve the couscous with avocado, roasted vegetables, mixed leaves, cherry tomatoes, basil leaves, and roasted chickpeas after fluffing it with a fork. Dress with a drizzle.
