This homemade curry is a hearty blend of tender mushrooms, nutritious spinach, and protein-packed chickpeas simmered in a flavorful tomato-based sauce.

INGREDIENTS

  • 2 tablespoons coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach leaves
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked rice or naan for serving

INSTRUCTIONS

  1. Sauté Aromatics:
    • In a large skillet or pot, heat coconut oil over medium heat. Add the chopped onion and sautĂ© until translucent, about 3-4 minutes.
    • Add the minced garlic and grated ginger. SautĂ© for another 1-2 minutes until fragrant.
  2. Add Spices:
    • Stir in the cumin seeds, ground coriander, ground turmeric, garam masala, and chili powder. Cook for 1 minute to toast the spices.
  3. Tomatoes and Chickpeas:
    • Pour in the diced tomatoes with their juices. Add the drained and rinsed chickpeas. Stir to combine.
  4. Simmer Curry:
    • Cover and let the curry simmer for about 10 minutes to allow the flavors to meld together.
    • If the curry becomes too thick, add a splash of water or vegetable broth.
  5. Add Mushrooms and Spinach:
    • Add the sliced mushrooms to the curry. Stir and cook for 5-7 minutes until the mushrooms are tender.
    • Stir in the fresh spinach leaves. Allow them to wilt in the curry for 2-3 minutes.
    • Season with salt and pepper to taste.
  6. Serve:
    • Garnish with fresh cilantro.
    • Serve the mushroom curry hot over cooked rice or with naan bread.

  • Adjust the spice levels to your preference by increasing or decreasing the amount of chili powder.
