This Vegan Broccoli Chickpea Cilantro Almond Rice is a flavorful and nutritious dish that combines the goodness of broccoli and chickpeas with fragrant cilantro, crunchy almonds, and a mix of white and red rice. INGREDIENTS

  • 1 cup white rice
  • 1 cup red rice (or use all white rice)
  • 2 cups vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups broccoli florets
  • 1/2 cup slivered almonds
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges (for serving)

INSTRUCTIONS

1. Cook Rice:

  • Rinse the white and red rice under cold water until the water runs clear.
  • In a large pot, combine the rice and vegetable broth. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 20-25 minutes or until the rice is tender and the liquid is absorbed.

2. Roast Chickpeas and Broccoli:

  • Preheat your oven to 400°F (200°C).
  • On a baking sheet, spread out the drained and rinsed chickpeas. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  • Place the broccoli florets on the same baking sheet. Drizzle with olive oil, sprinkle with minced garlic, salt, and pepper. Toss to combine.
  • Roast in the preheated oven for 20-25 minutes, or until the chickpeas are crispy and the broccoli is tender and slightly browned.

3. Toast Almonds:

  • In a dry skillet over medium heat, toast the slivered almonds until golden and fragrant. Be careful not to burn them. Remove from heat and set aside.

4. Assemble:

  • In a large mixing bowl, combine the cooked rice, roasted chickpeas, roasted broccoli, toasted almonds, and chopped cilantro. Toss gently to combine.
  • Season with additional salt and pepper if needed.

5. Serve:

  • Serve the Vegan Broccoli Chickpea Cilantro Almond Rice warm, with lemon wedges on the side for a fresh citrusy kick.
