This quick one-pot lasagna is a convenient and fuss-free way to enjoy all the flavors of traditional lasagna without the hassle of layering and baking. It’s perfect for busy weeknights when you want a satisfying and comforting meal with minimal cleanup. Plus, it’s versatile, so feel free to customize it with your favorite vegetables and seasonings!

  • 8 lasagna noodles, broken into pieces
  • 1 can (14 oz) diced tomatoes
  • 2 cups marinara sauce
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced mushrooms
  • 1 cup diced zucchini
  • 1 cup diced bell peppers
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup shredded vegan mozzarella cheese
  • Fresh basil leaves, chopped (for garnish)


  1. In a large pot or Dutch oven, combine the broken lasagna noodles, diced tomatoes, marinara sauce, vegetable broth, diced onion, minced garlic, diced mushrooms, diced zucchini, diced bell peppers, dried basil, dried oregano, red pepper flakes (if using), salt, and pepper.
  2. Stir well to combine all ingredients and ensure the noodles are submerged in the liquid.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer, covered, for about 20-25 minutes, stirring occasionally, until the noodles are cooked through and tender.
  4. Once the noodles are cooked, remove the pot from the heat and stir in the shredded vegan mozzarella cheese until melted and well combined.
  5. Taste and adjust the seasoning with more salt and pepper if needed.
  6. Garnish the quick one-pot lasagna with chopped fresh basil leaves before serving.
  7. Serve hot and enjoy this delicious and comforting one-pot lasagna straight from the pot!
