INSTRUCTIONS
- Soak the Red Beans:
- Rinse the dried red beans under cold water and place them in a large bowl. Cover with water and let soak overnight. Drain before using.
- Cook the Red Beans:
- In a large pot, add the soaked red beans and cover with fresh water. Bring to a boil, then reduce heat to a simmer and cook for 45 minutes to 1 hour, or until the beans are tender. Drain and set aside.
- Prepare the Stew:
- In the same pot, heat a bit of oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic, diced bell pepper, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
- Add the Beans and Tomatoes:
- Add the cooked red beans, diced tomatoes (with their juices), and vegetable broth to the pot.
- Stir in the ground cumin, smoked paprika, and chili powder (if using).
- Season with salt and pepper to taste.
- Simmer the Stew:
- Bring the stew to a simmer, then reduce heat to low. Cover and let simmer for about 30-45 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
