INGREDIENTS

  • 1 cup dried red beans, soaked overnight
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder (optional, for extra heat)
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped (for garnish)
  • Cooked rice, for serving

INSTRUCTIONS

  1. Soak the Red Beans:
    • Rinse the dried red beans under cold water and place them in a large bowl. Cover with water and let soak overnight. Drain before using.
  2. Cook the Red Beans:
    • In a large pot, add the soaked red beans and cover with fresh water. Bring to a boil, then reduce heat to a simmer and cook for 45 minutes to 1 hour, or until the beans are tender. Drain and set aside.
  3. Prepare the Stew:
    • In the same pot, heat a bit of oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
    • Add the minced garlic, diced bell pepper, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  4. Add the Beans and Tomatoes:
    • Add the cooked red beans, diced tomatoes (with their juices), and vegetable broth to the pot.
    • Stir in the ground cumin, smoked paprika, and chili powder (if using).
    • Season with salt and pepper to taste.
  5. Simmer the Stew:
    • Bring the stew to a simmer, then reduce heat to low. Cover and let simmer for about 30-45 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
  6. Serve:
    • Ladle the red bean stew into bowls.
    • Garnish with chopped fresh cilantro or parsley.
    • Serve hot with cooked rice on the side.
