This tasty broccoli and quinoa salad is a delightful mix of flavors and textures, with the nutty quinoa, crunchy broccoli, sweet cranberries, and tangy dressing. It’s perfect for picnics, potlucks, or as a healthy meal prep option. Plus, it’s packed with nutrients and can be easily customized with your favorite nuts or seeds.

For the Salad:
  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 head broccoli, cut into small florets
  • 1/2 red onion, finely chopped
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup chopped almonds or pecans
  • Salt and pepper to taste
For the Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup or honey (for non-vegan)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1/2 lemon (optional)


For the Quinoa:
  1. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
For the Salad:
  1. In a large bowl, combine the cooked and cooled quinoa, broccoli florets, chopped red onion, dried cranberries or raisins, and chopped almonds or pecans. Mix well.
  2. Season the salad with salt and pepper to taste.
For the Dressing:
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup or honey, Dijon mustard, minced garlic, salt, pepper, and lemon juice (if using), until well combined.
  2. Pour the dressing over the salad and toss to coat everything evenly.
  3. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.

  2. Garnish with additional chopped nuts or fresh herbs if desired before serving.
