INGREDIENTS

For the Roasted Potatoes and Spiced Chickpeas:
  • 2 cups baby potatoes, halved
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
For the Quinoa Salad:
  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, ground cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread them out on a baking sheet in a single layer.
  3. In the same bowl, toss the chickpeas with the remaining 1 tablespoon of olive oil, salt, and pepper. Spread them out on the baking sheet alongside the potatoes.
  4. Roast the potatoes and chickpeas in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, and the chickpeas are crispy.
  5. While the potatoes and chickpeas are roasting, cook the quinoa according to package instructions. Once cooked, let it cool slightly.
  6. In a large bowl, combine the cooked quinoa, chopped red onion, chopped parsley, chopped cilantro, lemon juice, and olive oil. Season with salt and pepper to taste.
  7. Once the roasted potatoes and chickpeas are done, add them to the quinoa salad mixture and toss everything together gently.
  8. Serve the Roasted Potato & Spiced Chickpea Quinoa Salad warm or at room temperature.
