INGREDIENTS

  • 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
  • 2 roasted red peppers, homemade or from a jar, drained
  • 2 cloves garlic, minced
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Water (as needed for desired consistency)
  • Optional toppings: drizzle of olive oil, sprinkle of paprika, chopped fresh parsley

INSTRUCTIONS

  1. If using fresh red peppers, preheat the oven to 425°F (220°C). Place whole red peppers on a baking sheet and roast in the oven for about 15 minutes, or until the skins are charred and blistered. Remove from the oven and let cool. Once cooled, remove the skins, seeds, and stems from the peppers.
  2. In a food processor, combine the chickpeas, roasted red peppers, minced garlic, tahini, lemon juice, olive oil, ground cumin, paprika, salt, and pepper.
  3. Process the mixture until smooth and creamy, scraping down the sides of the food processor as needed. If the hummus is too thick, add water, 1 tablespoon at a time, until desired consistency is reached.
  4. Taste the hummus and adjust seasoning if needed, adding more salt, pepper, or lemon juice to taste.
  5. Transfer the hummus to a serving bowl. If desired, drizzle with a little olive oil, sprinkle with paprika, and garnish with chopped fresh parsley.
  6. Serve the Roasted Red Pepper Hummus with pita bread, crackers, vegetable sticks, or as a spread for sandwiches or wraps.
