INGREDIENTS
- 1 cup spelt grains
- 1 block (14 oz) firm tofu, drained and pressed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sriracha sauce

- 2 cloves garlic, minced
- 1 head broccoli, cut into florets
- 1/2 head savoy cabbage, thinly sliced

INSTRUCTIONS
- Cook Spelt Grains: In a saucepan, cook spelt grains according to package instructions. Once cooked, drain any excess water and set aside.
- Prepare Tofu: Cut the pressed tofu into cubes. In a bowl, mix together soy sauce, sesame oil, and sriracha sauce. Add tofu cubes to the marinade, gently toss to coat, and let marinate for 10-15 minutes.
- Chargrill Tofu: Heat olive oil in a skillet over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant. Add marinated tofu cubes to the skillet, reserving the marinade. Cook tofu for about 3-4 minutes on each side until golden and crispy. Remove tofu from the skillet and set aside.
- Cook Vegetables: In the same skillet, add broccoli florets and sliced savoy cabbage. Season with salt and pepper. Cook for about 5-6 minutes until vegetables are tender-crisp.
- Combine Ingredients: Return the cooked spelt grains to the skillet with the vegetables. Add the reserved marinade from the tofu. Stir everything together and cook for an additional 2-3 minutes to heat through.
- Serve: Divide the spelt and vegetable mixture between plates. Top with the chargrilled tofu cubes. Garnish with sesame seeds and fresh cilantro.
