  • 4 medium sweet potatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 avocado, diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional toppings: salsa, vegan sour cream, sliced jalapeños, chopped green onions


  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the sweet potatoes and pierce each one several times with a fork. Place them on the prepared baking sheet.
  3. Bake the sweet potatoes in the preheated oven for 40-45 minutes, or until they are tender and can be easily pierced with a fork.
  4. While the sweet potatoes are baking, prepare the filling. In a large mixing bowl, combine the black beans, corn kernels, diced avocado, diced red onion, chopped cilantro, and lime juice. Season with salt and pepper to taste. Toss gently to combine.
  5. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
  6. Make a lengthwise slit in the top of each sweet potato, cutting almost but not completely through.
  7. Gently press on the ends of the sweet potatoes to open them up slightly.
  8. Spoon the black bean and corn mixture generously into each sweet potato.
  9. Top each loaded sweet potato with optional toppings such as salsa, vegan sour cream, sliced jalapeños, and chopped green onions, if desired.
  10. Serve the loaded sweet potatoes immediately as a delicious and satisfying meal.
