Tofu Noodle Bowl Ingredients:

  • 8 oz (225g) firm tofu, pressed and cubed
  • 4 oz (115g) rice noodles
  • 2 cups mixed vegetables (such as bell peppers, carrots, snap peas, cabbage, etc.), thinly sliced
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds (optional)
  • Salt and pepper to taste
  • Lime wedges for serving (optional)
Vegetable Spring Roll Ingredients:

  • 4 spring roll wrappers
  • 1 cup mixed vegetables (such as shredded cabbage, carrots, cucumber, avocado, etc.)
  • 1/4 cup fresh herbs (such as cilantro, mint, or basil)
  • Soy sauce or sweet chili sauce for dipping


  1. Cook the rice noodles according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok, heat some oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  4. Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are tender-crisp.
  5. Return the cooked tofu to the skillet. Add the cooked rice noodles, soy sauce, sesame oil, rice vinegar, and sliced green onions. Toss everything together until well combined. Season with salt and pepper to taste.
  6. If using, sprinkle sesame seeds over the tofu noodle bowl before serving. Serve hot with lime wedges on the side.

Instructions for Vegetable Spring Roll:

  1. Place a spring roll wrapper on a clean surface.
  2. Arrange a small portion of mixed vegetables and fresh herbs in the center of the wrapper.
  3. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top, sealing the edge with a bit of water.
  4. Repeat with the remaining wrappers and filling.
  5. Serve the vegetable spring rolls with soy sauce or sweet chili sauce for dipping.
