Vegan pineapple salad with fresh arugula, avocado and dried cranberry

  • 2 Cup finely chopped pineapple
  • 1 cup dried red plums
  • 1 lemon sliced
  • 2 tablespoon lemon juice
  • 2 tablespoon extra virgin olive oil
  • ¼ cup Cilantro or Coriander 
  • Salt to taste


  1. Mix salt, lemon juice and olive oil. Whisk to combine. 
  2. Toss chopped pineapple, dried red plums, cilantro or coriander and sliced lemon in a salad bowl.
  3. Pour the dressing over and toss gently to combine. 
  4. Keep in the refrigerator for 1 hour.
