INGREDIENTS
- 2 Cup finely chopped pineapple
- 1 cup dried red plums
- 1 lemon sliced
- 2 tablespoon lemon juice
- 2 tablespoon extra virgin olive oil
- ¼ cup Cilantro or Coriander
- Salt to taste
DIRECTIONS
- Mix salt, lemon juice and olive oil. Whisk to combine.
- Toss chopped pineapple, dried red plums, cilantro or coriander and sliced lemon in a salad bowl.
- Pour the dressing over and toss gently to combine.
- Keep in the refrigerator for 1 hour.
