INGREDIENTS

  • 4 large flour tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked brown rice
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 jalapeño, seeded and minced (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 avocado, sliced
  • Salsa, guacamole, or vegan sour cream (for serving)

INSTRUCTIONS

  1. Prepare the Filling:
    • In a large skillet, heat some oil over medium heat.
    • Add the diced red bell pepper, red onion, and jalapeño (if using). Sauté for about 3-4 minutes until softened.
    • Add the minced garlic, ground cumin, chili powder, salt, and pepper. Stir and cook for another 1-2 minutes until fragrant.
    • Add the black beans, cooked brown rice, and corn kernels to the skillet. Stir well to combine.
    • Cook for 5-7 minutes, stirring occasionally, until everything is heated through and well mixed.
    • Remove from heat and stir in the fresh cilantro and lime juice. Adjust seasoning to taste.
  2. Assemble the Burritos:
    • Warm the flour tortillas slightly to make them more pliable.
    • Spoon a generous portion of the filling onto each tortilla, placing it slightly off-center.
    • Top with a few slices of avocado.
  3. Fold the Burritos:
    • Fold the sides of the tortilla over the filling.
    • Start rolling from the bottom, tucking in the sides as you go.
    • Continue rolling until you have a tight burrito.
  4. Serve:
    • Serve the vegan burritos warm with salsa, guacamole, or vegan sour cream on the side.
    • Optionally, you can lightly toast the assembled burritos in a skillet for a crispy exterior before serving.
  5. Enjoy: Enjoy these hearty and flavorful vegan burritos as a satisfying meal!
  6. Storage: If you have leftovers, wrap the burritos individually in foil or plastic wrap and store them in the refrigerator for up to 3 days. They can also be frozen for longer storage. To reheat, unwrap and microwave for 1-2 minutes, or bake in the oven at 350°F (175°C) for 15-20 minutes until heated through.
