INGREDIENTS

  • 2 cups all-purpose flour
  • 1 cup vegan cottage cheese
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 pear, peeled and diced
  • 1/2 cup chopped pecans
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

INSTRUCTIONS

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.

2. Mix Dry Ingredients:

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt.

3. Prepare Wet Ingredients:

  • In another bowl, combine the vegan cottage cheese, almond milk, maple syrup, and melted coconut oil. Mix until well combined.

4. Combine Wet and Dry:

  • Pour the wet ingredients into the bowl of dry ingredients. Stir until just combined, being careful not to overmix. The batter should be thick and lumpy.

5. Fold in Pear and Pecans:

  • Gently fold in the diced pear and chopped pecans into the muffin batter.

6. Fill Muffin Cups:

  • Spoon the batter into the prepared muffin cups, filling each about 3/4 full.

7. Bake:

  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8. Cool and Serve:

  • Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
