- 1 head cauliflower, cut into florets
- 1 can (14 oz) chickpeas, drained and rinsed

INSTRUCTIONS
- Sauté Onion, Garlic, and Ginger:
- In a large pot or deep skillet, heat the coconut oil over medium heat.

- Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.
- Add Spices:

- Add Tomatoes and Coconut Milk:
- Pour in the diced tomatoes with their juices and the full-fat coconut milk.
- Stir everything together, scraping the bottom of the pot to incorporate any browned bits.
- Add Cauliflower and Chickpeas:
- Add the cauliflower florets and drained chickpeas to the pot.
- Season with salt and pepper to taste.
