INGREDIENTS

  • 2 cups cooked jasmine rice, cooled (preferably day-old rice)
  • 1 cup ripe durian flesh, diced
  • 1 cup mixed vegetables (such as bell peppers, carrots, peas, and corn)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • Salt and pepper to taste
  • Optional: chopped scallions or cilantro for garnish

INSTRUCTIONS

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add minced garlic and diced onion to the skillet. Sauté until the onion is translucent and fragrant.
  3. Add mixed vegetables to the skillet and cook until they are tender yet still crisp.
  4. Add diced durian flesh to the skillet and stir-fry for a few minutes until heated through.
  5. Push the vegetables and durian to one side of the skillet, and add the cooked rice to the other side.
  6. Pour soy sauce or tamari over the rice and toss to combine with the vegetables and durian.
  7. Stir-fry everything together until the rice is heated through and evenly coated with the soy sauce.
  8. Season with salt and pepper to taste.
  9. Remove from heat and garnish with chopped scallions or cilantro if desired.
