INGREDIENTS

For the General Tso Tofu:
  • 1 block (14 oz) firm tofu, pressed and cubed
  • 1/4 cup cornstarch
  • 2 tablespoons vegetable oil, for frying
  • 1/4 cup soy sauce or tamari
  • 3 tablespoons rice vinegar
  • 3 tablespoons maple syrup or agave nectar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • Sesame seeds and green onions, for garnish
For the Rice and Greens:
  • 1 cup jasmine rice, rinsed
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 4 cups mixed greens (such as spinach, kale, or bok choy)
  • Salt and pepper to taste

INSTRUCTIONS

  1. Prepare the General Tso Tofu:
    • Press the tofu to remove excess moisture: Wrap the tofu block in a clean kitchen towel and place something heavy on top (like a cast iron skillet) for about 15 minutes.
    • Cut the pressed tofu into cubes and toss them in cornstarch until evenly coated.
    • Heat vegetable oil in a large skillet over medium-high heat. Fry the tofu cubes until golden and crispy on all sides. Remove tofu from the skillet and set aside.
  2. Make the General Tso Sauce:
    • In a small bowl, whisk together soy sauce, rice vinegar, maple syrup or agave nectar, minced garlic, grated ginger, and red pepper flakes.
    • Pour the sauce into the skillet over medium heat. Bring to a simmer.
  3. Thicken the Sauce:
    • Stir in the cornstarch slurry (cornstarch mixed with water) into the simmering sauce. Cook for 1-2 minutes until the sauce thickens.
  4. Add Tofu:
    • Return the fried tofu to the skillet with the sauce. Stir to coat the tofu in the sauce.
    • Let it simmer for another 2-3 minutes to allow the tofu to absorb the flavors.
  5. Cook Rice:
    • In a separate saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and fluffy.
  6. Sauté Greens:
    • In another skillet, heat vegetable oil over medium heat.
    • Add the mixed greens and sautĂ© until wilted. Season with salt and pepper to taste.
  7. Serve:
    • Serve the General Tso tofu over the cooked jasmine rice.
    • Garnish with sesame seeds and sliced green onions.
    • Serve with sautĂ©ed greens on the side.

  9. Tips:
    • For extra crispiness, you can bake the tofu cubes in the oven at 400°F (200°C) for 25-30 minutes instead of frying.
    • Adjust the sauce’s sweetness and spiciness according to your taste preferences by adding more maple syrup or red pepper flakes.
    • Feel free to add more vegetables to the dish, such as bell peppers, broccoli, or snap peas.
  10. Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water until warmed through.
