INGREDIENTS
- 2 packs (3 oz each) vegan ramen noodles
- 2 cups vegetable broth
- 2 cups water
- 1 cup kimchi, chopped
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon miso paste
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 4 ounces firm tofu, cubed
- 2 green onions, chopped
- Sesame seeds, for garnish
- Red pepper flakes, for garnish (optional)
INSTRUCTIONS
- Prepare Noodles: Cook the ramen noodles according to package instructions. Drain and set aside.
- Make Broth: In a pot, combine vegetable broth, water, soy sauce, sesame oil, miso paste, ginger, and garlic. Bring to a simmer over medium heat.
- Add Kimchi and Tofu: Add chopped kimchi and cubed tofu to the simmering broth. Let it cook for 5-7 minutes to allow flavors to meld.
- Assemble Ramen: Divide the cooked ramen noodles into two bowls. Ladle the hot broth with kimchi and tofu over the noodles.
- Garnish and Serve: Top with chopped green onions, sesame seeds, and red pepper flakes if desired. Serve hot and enjoy!
