VEGAN KIMCHI RAMEN

A spicy and flavorful vegan ramen featuring tangy kimchi, chewy noodles, and a rich broth. This comforting bowl is packed with umami flavors and can be customized with your favorite toppings.

INGREDIENTS

  • 2 packs (3 oz each) vegan ramen noodles
  • 2 cups vegetable broth
  • 2 cups water
  • 1 cup kimchi, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon miso paste
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 4 ounces firm tofu, cubed
  • 2 green onions, chopped
  • Sesame seeds, for garnish
  • Red pepper flakes, for garnish (optional)

INSTRUCTIONS

  1. Prepare Noodles: Cook the ramen noodles according to package instructions. Drain and set aside.
  2. Make Broth: In a pot, combine vegetable broth, water, soy sauce, sesame oil, miso paste, ginger, and garlic. Bring to a simmer over medium heat.
  3. Add Kimchi and Tofu: Add chopped kimchi and cubed tofu to the simmering broth. Let it cook for 5-7 minutes to allow flavors to meld.
  4. Assemble Ramen: Divide the cooked ramen noodles into two bowls. Ladle the hot broth with kimchi and tofu over the noodles.
  5. Garnish and Serve: Top with chopped green onions, sesame seeds, and red pepper flakes if desired. Serve hot and enjoy!
Notes:
  • Feel free to adjust the spiciness by adding more or less kimchi and red pepper flakes.
  • For added protein, you can add edamame, tempeh, or seitan along with or instead of tofu.
  • Customize with additional toppings like sliced mushrooms, spinach, or nori sheets.
