INGREDIENTS

For the Loaf:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • 1/3 cup lemon juice
  • 1/2 cup unsweetened almond milk (or any plant-based milk)
  • 1/2 cup maple syrup or agave syrup
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)
For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice
  • Zest of 1 lemon (optional)

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). Grease or line a loaf pan with parchment paper and set aside.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest.
  3. In a separate bowl, combine the lemon juice, almond milk, maple syrup or agave syrup, melted coconut oil or vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the blueberries until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the loaf from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. While the loaf is cooling, prepare the lemon glaze by whisking together the powdered sugar and lemon juice until smooth. Add more lemon juice as needed to reach your desired consistency. Stir in lemon zest if using.
  10. Once the loaf has cooled completely, drizzle the lemon glaze over the top.
  11. Slice and serve your Vegan Lemon Blueberry Loaf, and enjoy!
