INGREDIENTS

For the Meatloaf:
  • 1 cup cooked lentils
  • 1 cup cooked quinoa
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1 celery stalk, finely chopped
  • 1/2 cup rolled oats (or breadcrumbs)
  • 1/4 cup tomato paste
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon Worcestershire sauce (vegan if preferred)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
For the Glaze:
  • 1/4 cup ketchup
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the cooked lentils, cooked quinoa, chopped onion, minced garlic, grated carrot, chopped celery, rolled oats (or breadcrumbs), tomato paste, soy sauce, Worcestershire sauce, dried thyme, dried oregano, smoked paprika, salt, and pepper. Mix well until everything is evenly combined.
  3. Transfer the mixture to the prepared loaf pan. Use a spoon or your hands to press the mixture firmly into the pan, smoothing the top.
  4. In a small bowl, whisk together the ketchup, maple syrup, and apple cider vinegar to make the glaze.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Cover the loaf pan with foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and continue to bake for another 10-15 minutes, or until the top is caramelized and the meatloaf is cooked through.
  8. Remove from the oven and let it rest for 10 minutes before slicing.
  9. Slice the plant-based meatloaf and serve warm. Enjoy with your favorite sides such as mashed potatoes, steamed vegetables, or a side salad.
  10. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
