INGREDIENTS

  • 12 oz (340g) cremini mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 cup vegetable broth
  • 1 cup canned coconut milk
  • 2 tablespoons all-purpose flour (or cornstarch for gluten-free)
  • Salt and pepper to taste
  • Cooked pasta or rice for serving
  • Chopped fresh parsley for garnish

INSTRUCTIONS

  1. Sauté Mushrooms:
    • In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, sautĂ© for 2-3 minutes until softened.
    • Add the sliced mushrooms and cook for another 5-7 minutes until they release their moisture and start to brown.
  2. Make Sauce:
    • Stir in the soy sauce, smoked paprika, and dried thyme. Cook for 1 minute to toast the spices.
    • Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes to cook off the raw flour taste.
    • Slowly pour in the vegetable broth while stirring constantly to avoid lumps.
    • Pour in the coconut milk and bring the mixture to a simmer. Cook for 5-7 minutes until the sauce thickens. If it’s too thick, you can add more vegetable broth to reach your desired consistency.
    • Season with salt and pepper to taste.
  3. Serve:
    • Serve the mushroom stroganoff over cooked pasta or rice.
    • Garnish with chopped fresh parsley before serving.
Notes:
  • Feel free to use any type of mushrooms you prefer or have on hand.
  • For a creamier sauce, you can use full-fat coconut milk.
