INGREDIENTS

  • 6 oz (170g) flat rice noodles (Pad Thai noodles)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1/2 cup firm tofu, cubed
  • 1/4 cup chopped peanuts (for garnish)
  • 2 green onions, sliced (for garnish)
  • Lime wedges (for serving)
For the Pad Thai Sauce:
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons maple syrup or agave syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon tomato paste
  • 1 teaspoon sriracha sauce (adjust to taste)
  • 1 clove garlic, minced
  • 1/2 teaspoon grated ginger

INSTRUCTIONS

  1. Cook the flat rice noodles according to the package instructions. Once cooked, drain and set aside.
  2. In a small bowl, whisk together all the ingredients for the Pad Thai sauce: soy sauce or tamari, maple syrup or agave syrup, rice vinegar, lime juice, tomato paste, sriracha sauce, minced garlic, and grated ginger. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and sliced onion, and cook for 2 minutes until softened.
  4. Add thinly sliced bell pepper, julienned carrot, broccoli florets, and cubed tofu to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp and the tofu is golden brown.
  5. Add the cooked rice noodles to the skillet, along with the prepared Pad Thai sauce. Toss everything together until well combined and heated through.
  6. Taste and adjust seasoning if needed, adding more soy sauce or sriracha sauce as desired.
  7. Once everything is heated through and well coated in the sauce, remove the skillet from the heat.
  8. Serve the Vegan Pad Thai hot, garnished with chopped peanuts, sliced green onions, and lime wedges on the side for squeezing over the noodles.
