  • 1 cup of pecans, finely chopped
  • 7 tablespoons of vegan margarine (select a plant-derived alternative)
  • 1/3 cup of granulated sugar
  • 1 cup of brown sugar
  • 2 flaxseed eggs (2 tablespoons of ground flaxseed mixed with 5 tablespoons of water)
  • 1 tablespoon of pure vanilla essence
  • 2 cups of all-purpose flour
  • 1/2 teaspoon of baking soda
  • A dash of salt
  • Pecan halves for garnishing each cookie


  1. Preheat the oven to 350ºF (175ºC) and line two baking sheets with parchment paper.
  2. Create flaxseed eggs by combining 2 tablespoons of ground flaxseed with 5 tablespoons of water in a small bowl. Allow it to thicken for a few minutes.
  3. Use an electric mixer to beat the vegan margarine, granulated sugar, and brown sugar until the mixture achieves a light and creamy consistency.
  4. Incorporate the flaxseed eggs and pure vanilla essence into the butter-sugar mixture, beating for an additional 2 minutes.
  5. Gradually introduce the all-purpose flour, baking soda, and a pinch of salt to the mixture, ensuring thorough blending.
  6. Utilize a medium-sized cookie scoop to distribute the dough onto the prepared baking sheets. Top each cookie with a pecan half.
  7. Bake in the preheated oven for approximately 10 to 15 minutes, or until the cookies attain a golden brown hue.
