INGREDIENTS

  • 1 cup sushi rice, cooked and cooled
  • 1 block firm tofu, pressed and cubed
  • 2 ripe avocados, sliced
  • 1 mango, peeled and diced
  • 1 large carrot, julienned
  • 1/2 cup seaweed salad
  • 1/4 cup chopped green onions
  • Sesame seeds, for garnish
  • Lime wedges, for serving
For the Tofu Marinade:
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
For the Dressing:
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
INSTRCTIONS

  1. Marinate Tofu: In a bowl, whisk together the tofu marinade ingredients. Add cubed tofu and let marinate for at least 15 minutes.
  2. Cook Rice: Prepare sushi rice according to package instructions. Let cool.
  3. Grill Tofu: Heat a grill pan over medium-high heat. Grill marinated tofu for 2-3 minutes on each side until crispy and browned.
  4. Assemble Bowl: Divide cooked rice among four bowls. Top with grilled tofu, sliced avocado, diced mango, julienned carrot, and seaweed salad.
  5. Make Dressing: In a small bowl, whisk together the dressing ingredients.
  6. Drizzle Dressing: Drizzle dressing over the bowls. Garnish with chopped green onions and sesame seeds.
  7. Serve: Serve vegan poke bowls with lime wedges on the side.
