INGREDIENTS

  • 2 large russet potatoes, peeled
  • 1 small onion, finely grated
  • 2 tablespoons ground flaxseed meal
  • 6 tablespoons water
  • 1/4 cup all-purpose flour (or use gluten-free flour if needed)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • Vegan sour cream, for serving
  • Applesauce, for serving
  • Chopped fresh chives or parsley, for garnish (optional)

INSTRUCTIONS

  1. Prepare Flax Eggs:
    • In a small bowl, mix together the ground flaxseed meal and water. Let it sit for about 5-10 minutes to thicken and form a gel-like consistency.
  2. Grate Potatoes:
    • Grate the peeled potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  3. Mix Ingredients:
    • In a large mixing bowl, combine the grated potatoes, finely grated onion, flaxseed eggs, flour, salt, and black pepper. Mix well until everything is evenly combined.
  4. Form Pancakes:
    • Heat a large skillet or frying pan over medium heat and add enough vegetable oil to coat the bottom.
    • Once the oil is hot, use a spoon or measuring cup to scoop out portions of the potato mixture. Flatten each portion into a pancake shape and carefully place it into the hot oil. Repeat to fill the skillet without overcrowding.
  5. Fry Pancakes:
    • Cook the pancakes for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat as needed to prevent burning.
  6. Serve:
    • Once cooked, transfer the potato pancakes to a paper towel-lined plate to drain any excess oil.
    • Serve the Vegan Potato Pancakes warm with a dollop of vegan sour cream and a spoonful of applesauce on top.
